Mushrooms contain protein, vitamins, minerals, and antioxidants.
Mushrooms are a good source of:
-Antioxidants – mushrooms are the best food source of selenium, which is associated with cancer prevention.
-Beta glucan – a form of soluble dietary fiber that’s been strongly linked to improving cholesterol and boosting heart health.
-B vitamins – help maintain good health and well-being.
-Copper – helps your body make red blood cells, which are used to deliver oxygen all over the body.
-Potassium – very important for the heart, muscle, and nerve function.
What’s on my plate?
-1 small potato, cubed and boiled, then browned in a pan for a couple of minutes in 1 tsp avocado oil.
-2 poached eggs (placed on a bed of 1 cup sautéed baby spinach).
-1 red pepper sliced and sautéed.
-1 cup mushrooms, sautéed with the pepper.
-2 small slices of avocado.
-black pepper and chopped parsley.
I’ve sautéed the mushrooms first, then when they were almost done I’ve added the red pepper and the boiled cubed potatoes. When done, I’ve added the baby spinach to the side of the pan and sautéed it for one minute.
