Have you ever tried Gazpacho?

 

Gazpacho is a cold soup made with blended vegetables that is widely eaten in Spain and Portugal, especially during hot summers, as it is refreshing and cool.

 

INGREDIENTS

*2 lb. tomatoes, quartered (I’ve used red and yellow tomatoes)

*2 small cucumbers, chopped

*1/2 red bell pepper, chopped

*1 clove garlic, roughly chopped

*2 tbsp sherry vinegar

*1/2 cup cold water

*2 tbsp Extra-virgin olive oil, plus a bit more for garnish

*Freshly ground black pepper

*2 tbsp. thinly sliced basil, for garnish

Optional: salt to taste, hot sauce

 

DIRECTIONS

*Combine tomatoes, cucumbers, pepper, garlic, vinegar, and water in a food processor or blender.

*Blend until smooth, then add olive oil and blend to combine.

*Taste and season with pepper, and more vinegar if needed. Cover and refrigerate until chilled.

*To serve, divide soup among bowls and top with basil and a drizzle of olive oil.
