Comfort food can pack a healthy punch!
When is cool and rainy outside, we all crave comfort foods.
Most often, comfort foods are usually quite heavy; however, I believe that comfort foods can taste delicious and be healthy too!
Today, given that is a cool and rainy day,  I’ve decided to make a Greek inspired dish for lunch.
So what’s on my plate?
-Greek chicken souvlaki
-1/2 cup cooked wild & red rice with 2 cups sautéed diced celery, white onion, red, orange, and green peppers, carrots (I’ve sautéed the veggies with minced garlic, olive oil, fresh chopped basil and oregano, black pepper, and a splash of white wine at the end)
